Disodium ethylenediamine tetraacetate, also called EDTA 2Na, is odorless or salty white or milky white crystal or granular powder, odorless, tasteless. It is soluble in water and extremely insoluble in ethanol.

It is an important chelating agent that can chelate metal ions in solution. Prevent metal caused by discoloration, deterioration, turbidity and vitamin C oxidation loss, but also improve the oxidation resistance of oil (oil in trace metals such as iron, copper and so on have the role of promoting oil oxidation).
